Add (dry) butter (I use 1 cup, but more can be used in place of 1 cup). Heat the oil in a medium-size saucepan over medium high heat, stirring once (always with a little extra oil, as it goes in) until it starts to melt, 3 to 5 minutes, and then gradually increase the heat as necessary.
(Make sure you do not boil the butter either.) Add the egg whites, cream of tartar or egg whites if you do not have them already.
Bake for 7 to 10 minutes in the middle and top with a layer of the crumbled egg, cut side down, and garnish with sliced mint leaves.
